A lot of the vitamins and minerals found in vegetables are also found in fruits…so if you eat upwards of 4 or 5 servings of fruit a day, and take a regular multivitamin, it is not the end of the world that you don't eat vegetables.

my suggestion, jus pinch ur nose n gulp down those veggies! :)
different veggies have diff vitamins n minerals… its almost impossible to replace em, besides they'll be unnatural anyways n not as effective.. but primarily u'll need a multi-vitamin capsule (vit a,b1….b12,c,…) also a mineral tab (iron), calcium can be obtained from dairy products n milk..

the above suggestion is good.. indian spices r great for veggies.. it has wide variety n flavor.. chinese sautee is also very tasty…u can also couple ur veg with some dish u like alot (eg: cheesy macaroni) to compliment it, n aid u eatin it
